Cassava Leaf

Cassava Leaf is a Liberian traditional dish which is served with white rice. It is a rich and very delicious meal. Locally, it is called Gbasayama.

Ingredients

A kilo of blended cassava leaf,

Blended pepper and onions,

Blended dry crawfish,

A kilo of beef,

Quarter kilo of fresh prawns,

Half kilo of cow-skin,

Half kilo of smoked dried fish,

Salt- [per taste]

5 cubes of Maggie season cube

Half liter of palm oil

How to Prepare:

Cut the cow skin into big cube sizes, add three Maggie cubes, a teaspoon of salt, a tablespoon of blended onions and crawfish boil with the meat. Let it boil for like 30mins then add the fresh prawns and dried fish, allow to boil for another 15, by which time the meat stock would almost be drying then add the blended Cassava Leaf to it, then add the blended pepper and more blended onions and blended crawfish. Add two more Maggie cubes, allow to boil and dry up all the water then add the palm oil. It is best served with while rice.
